Spring Slinking in Slowly

Well, here we are at the end of April, and it seems that spring is struggling to take hold... We've been enjoying and selling kale that overwintered in the high tunnel but the arugula & cilantro seeded in there earlier this month has paused just after sprouting.  Oleh did till the fields last Friday, amidst a snowsquall! But despite the cool temps & crazy precip, longer days of sunlight are encouraging for our hens and lady ducks and they are laying lots of eggs. Once again, every season here in the Hudson Valley offers its unique opportunity to savor something special from nature's bounty.  Time for some kale and bacon quiches, fresh goat milk yogurt, newly-tapped maple syrup, and even some special dessert treats, as we await the bursting of different goodies from our surrounding fields, farms and kitchens.  We invite you to join Rondout Valley Organics now, the easiest way to access all of these yummies and more, lovingly produced by your neighbors!
