Cooking Differences in Pasture Raised Beef

Pasture Raised beef is a much leaner cut than grain fed beef from a large feed lot. 
Our beef is leaner which means you will have to adjust your cooking methods!
 

  • Reduce your cooking time - because there is less fat to protect the meat and to heat, pasture raised beef will require a less cooking time than grain fed.
  • Reduce your cooking temperature - in order to help prevent over cooking you can lower the temperature of pasture raised beef. Even when you remove the meat from the heat it will continue cooking 5-10 degrees more. We recommend enjoying our beef at medium rare, or 130-145 degrees.
  • Thaw completely - thaw our meat completely before cooking. Place meat under cool running water, or in your refrigerator to thaw. If the meat is properly thawed it will help prevent the weeping of juices and flavor when you remove it from the vacuum sealed bag.
  • Use Olive Oil - In order to help prevent sticking and to add flavor use olive oil on your cooking surface.
