Fried Pork Chops, Mac & Cheese with Bacon-Onion Confit

Great news! We're still alive and the world didn't end -- that means The Backroom is open to serve your hunger needs.

Yesterday I didn't have much time to post a proper menu with descriptions -- so let me take some time to tell you about Farmer McGregor's Rabbit Tasting. We have some succulent freshly butchered (Tuesday!) rabbit from Big Hopper Farm right over in Bovina. Our chef is preparing it four ways -- liver and greens, buttermilk fried with sweet potato fries, roasted saddle with saffron polenta, and a braised leg with wild mushrooms. Decadent, Delicious, local. You also get to choose one of our desserts: Cheesecake, Maple-Crusted Apple Pie, Strawberry Rhubarb Pie, Fruits of the Forest Pie, or Molten Chocolate Cake... all of which could be made a-la-mode.
